Iced chai tea latte

I have a confession to make…I have a small addiction to starbucks chai tea lattes! I know they are super bad for you given that the main ingredient isn’t tea but three pumps of syrup, but let’s face it I’m not the only one who loves their caffeine hit filled with sugar. They say that people have a limit where they find things become too sweet, but I swear I never used to have one. Nothing was ever too sweet.

But I reluctantly had to quit my starbucks habit when I had to start seriously cutting sugar out of my diet, doctors orders. Number one on the hit list, sugary drinks. This was hard and I admit I didn’t manage to go cold turkey on the lattes, it took a while to wean myself off slowly.

But not wanting to give up completely, I now make my own. There were lots of test batched of this recipe, it took me a while to get right! Chai for me has to have the right balance of sweet and spice with a hint of heat. I think I’ve finally found the right balance.

As it’s summer pour the chai latte on ice, enjoy!

Iced Chai Tea Latte

Serves: 3-4
dairy free, gluten free, vegan, low fodmap

350ml / 1 1/2 cup water
2 black tea bags
2 cinnamon stick
5 cardamom pods, lightly crushed
1/2 tsp peppercorns
1 tbsp ginger, grated

2 tsp brown sugar / honey
250ml / 1 cup milk (whatever milk you like to drink!)

Grate the ginger. Lightly crush the cardamom pods.

Put the water in a pan on a medium heat. Add all the ingredients except for the milk and sugar and let simmer for 5mins. Strain and take out the tea bags. Add sugar and allow to dissolve. Leave to cool. Pass the tea through a muslin sieve or a strainer. Add the milk and pour over ice.

For dairy free and low fodmap make with almond/cashew milk
