Broccoli, Beans & Mangetout with Tahini & Sumac Sauce

Greens with tahini sauce | Food + me
Tahini sauce has become one of my go to staples. It’s so quick, you can literally make it in less than 2 minutes, yet it can immediately transform the plainest of dishes. Simply mix all the sauce ingredients together and drizzle over the greens to add a wonderful creamy nuttiness. You’ll barely recognize it as a side of greens. I often just add some quinoa or rice to eat it for a more satisfying lunch.

Broccoli, Beans & Mangetout with Tahini & Sumac Sauce

Serves: 2
dairy free, gluten free, vegan


100g broccoli
100g french beans, trimmed
100g mange tout, trimmed

Tahini & Sumac Sauce
2 tablespoons of tahini paste
1 1/2 tablespoons of water
1 garlic clove, crushed
juice of 1/2 lemon
salt and pepper
1 tsp sumac


First make the sauce. Mix the tahini and lemon juice together in a small bowl. Add the water until you have the consistency of double cream. Add the crushed garlic and sumac and season with salt and pepper.

Cut the broccoli in half lengthways or quarters if it is thick. Bring a large pan of water to the boil. Add all the greens and cook for about 2mins so that they are cooked but still lightly crunchy. Drain away the water. Mix the greens together in a bowl and drizzle over the the tahini sauce.
